Not because they’re loud or fancy — but because of the way people gather when they see them. Cinnamon star bread is one of those recipes. It’s gentle, soft, warmly spiced, and shaped with care. The kind of bread that makes people stop mid-sentence and smile.

This is a yeast-raised bread, not sourdough — chosen on purpose for its reliability, softness, and ease of shaping. It’s mixed, rested, shaped the evening before, then chilled so baking the next day feels calm instead of rushed.

🌾 Flour Choice (Important)

For the best texture and easiest shaping, use:

White Lily All-Purpose Flour

Why this works:

  • Lower protein = softer crumb
  • Rolls thin without fighting back

This is exactly the flour you want for star bread. No substitutions needed.


🧈 Dough Ingredients

  • 1 cup warm milk (about 100–105°F)
  • 2¼ teaspoons instant yeast (1 packet)
  • ⅓ cup sugar
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • ¼ cup butter, melted and cooled
  • ½ teaspoon salt
  • 3½–4 cups White Lily All-Purpose Flour

🍥 Cinnamon Sugar Filling

  • ½ cup butter, melted
  • ¾ cup brown sugar
  • 2 tablespoons cinnamon
  • Pinch of salt

🍰 Cream Cheese Icing (After Baking)

  • 4 ounces cream cheese, softened
  • ¼ cup butter, softened
  • 1½ cups powdered sugar
  • 1–2 tablespoons milk or cream
  • ½ teaspoon vanilla
  • Pinch of salt

🍞 Step-by-Step with Mrs. Clay

1️⃣ Mix the dough (Evening)

In a large bowl, combine:

  • warm milk
  • yeast
  • sugar
  • egg + egg yolk
  • melted butter

Stir gently.

Add:

  • salt
  • 3½ cups flour

Mix until a very soft dough forms. Add more flour only as needed — the dough should be soft, supple, and slightly tacky, not stiff.


2️⃣ Knead gently

Knead 6–8 minutes until smooth and elastic.

The dough should feel:

  • soft
  • relaxed
  • silky, not tight

Cover the dough and let it rest briefly so the gluten can relax.


3️⃣ First rise

Continue resting the dough at room temperature until slightly puffy and about 1½× its original size, about 60–90 minutes. I like to let mine hang out in my oven with just the light on. My house is cool, so this step helps.

During this time:

  • the dough finishes relaxing
  • fermentation begins
  • the dough becomes easier to divide and roll

4️⃣ Divide & rest

The dough will be sticky and soft! Totally normal! Oil your hands lightly and gently divide the dough into 4 equal pieces.

Shape each into a loose ball, place on a tray, cover, and rest 10–15 minutes. Once again, I place mine in the oven.
(This short rest makes rolling much easier and prevents snap-back.)


5️⃣ Make the filling

In a bowl, mix:

  • melted butter
  • brown sugar
  • cinnamon
  • pinch of salt

Set aside.


6️⃣ Roll & layer (This is the heart of it)

  • Spray hands and parchment paper lightly with oil.
  • Roll one dough piece into a thin circle (about 10–11 inches)
  • Place it on baking sheet.

Brush evenly with butter mixture.

Repeat with:

  • second dough → filling
  • third dough → filling

Place the fourth dough circle on topno filling on the top layer.

You now have four layers of dough, three layers of filling.

Cover and let rest for 10-15 minutes.


7️⃣ Shape the star

  • Place a small cup or round cutter in the center (about 2 inches wide)
  • Cut the dough into 16 equal strips, stopping at the cup

Working two strips at a time:

  • Twist them away from each other 2–3 times
  • Pinch the ends together

Repeat all the way around.
Remove the center cup.

You’ll see the star take shape — it’s always a quiet little miracle.


8️⃣ Chill overnight

Cover with plastic wrap and refrigerate 8–18 hours.

This:

  • improves flavor
  • relaxes the dough
  • makes tomorrow peaceful

🌅 Baking Day

9️⃣ Warm & rise

Remove from fridge 2–3 hours before baking.

The star should:

  • puff slightly
  • feel soft
  • not spring back sharply when touched

🔟 Bake

Bake at 350°F for 20–25 minutes, until:

  • lightly golden
  • fragrant
  • fully set in the center

If browning too quickly, tent loosely with foil.

Cool slightly.


🔔 Finish with icing

Whisk icing ingredients until smooth.

Drizzle over warm (not hot) bread.
