🍅 Mrs. Clay’s Salsa

Fresh, Tangy, and Just the Right Kick — A Tex-Mex Style Favorite

There’s nothing quite like a bowl of bright, zesty salsa tucked next to warm tortilla chips. It’s fresh, tangy, and full of life — the kind of salsa that livens up everything from taco night to quiet evenings at home with a snack. This style is the familiar, much-loved Tex-Mex table salsa: smooth but not puréed, pourable but not watery, and wonderfully balanced with just the right amount of heat.

The secret is using pantry staples and pickled jalapeños for that classic Tex-Mex flavor. A tiny whisper of cilantro adds brightness, but not enough to taste like cilantro. Even if you’re someone who can spot cilantro from across the room, I promise — this amount only lifts the flavor without ever stealing the show.

Let’s make a batch of the salsa everyone reaches for first. ✨

🍅 Mrs. Clay’s Salsa

Fresh • Tangy • Mild-Heat • Ready in 5 Minutes

Ingredients

  • 1 can (28 oz) whole peeled tomatoes
  • ½ medium white onion, rough chopped
  • 2–3 tablespoons pickled jalapeño slices
  • 1–2 tablespoons pickled jalapeño brine
  • 1 clove garlic (or ¼ tsp garlic powder)
  • 1 tablespoon lime juice – fresh when possible, but bottled will work great
  • 1–2 teaspoons white vinegar
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 3–5 tiny cilantro leaves, only the tops (for brightness — taste will NOT be detectable)
  • ⅛–¼ teaspoon cumin
  • Optional: tiny pinch of sugar (⅛ tsp) to balance acidity

🔪 Instructions

1. Prep the Ingredients

Add everything to a blender — tomatoes, onion, garlic, jalapeños, brine, lime juice, vinegar, seasonings, and the three to five cilantro leaf tips.

2. Pulse Blend

Blend 5–8 seconds — just enough to break everything down.
The salsa should be:

  • bright red
  • pourable
  • lightly flecked
  • not foamy
  • not pink

3. Taste & Adjust

  • More salt = more “restaurant”
  • More brine = more Tex-Mex kick
  • More vinegar = brighter
  • More lime = fresher
  • Touch of sugar = smooths the acidity

4. Chill Before Serving

Refrigerate at least 1 hour.
The flavor blooms as it chills — it becomes brighter, smoother, and more balanced.

🌟 What Makes This Salsa Special

✔ Pourable, smooth, restaurant-style texture

Not chunky and not puréed — the perfect middle ground.

✔ Bright acidity

Thanks to lime juice, vinegar, and jalapeño brine.

✔ Subtle heat

Just enough jalapeño to make it lively, without overwhelming the palate.

✔ Cilantro for freshness — without cilantro flavor

Just three to five tiny leaves blended in.
You won’t taste or smell cilantro at all.

✔ Ready in 5 minutes

Everything goes straight into the blender.

💛 Mrs. Clay’s Tip

Blending too long turns salsa pink and foamy.
A quick pulse is the secret to that beautiful, bright red Tex-Mex look.
