🌾 Mrs. Clay’s Mexican Rice
Soft, Savory, and Just Like Your Favorite Tex-Mex Side

Some dishes become part of your rhythm — the ones you can make almost with your eyes closed because they just feel like home. This Mexican rice is one of those comforting, dependable sides. Soft, savory, gently seasoned, and beautifully familiar, it tastes like the kind you hope to see on the plate beside enchiladas, fajitas, grilled chicken, or anything Tex-Mex.
This stovetop version toasts the rice first, giving it that unmistakable restaurant aroma. Onion, garlic, salsa, chiles, and a whole jalapeño build a warm flavor base, while chicken broth gives it depth without heat. It simmers low and slow, just like the kitchens that inspired it — yielding tender grains with a hint of fluff and not a single mushy bite.
Let’s make it together. 💛
Step-by-Step with Mrs. Clay
1. Toast the Rice
Heat the butter and olive oil in a skillet over medium heat.
Add the rice and cook 5–7 minutes, stirring often, until it turns lightly golden and fragrant.
Toasting gives the rice its signature Tex-Mex flavor — warm, nutty, and aromatic. It’s the foundation of everything that follows.
2. Add the Onion & Garlic
Stir in the minced onion and sauté for 1–2 minutes.
Add garlic and cook 30–45 seconds — just until fragrant. This brings sweetness and richness, softening the flavors in the very best way.
3. Season the Grains
Add garlic salt, onion powder, and cumin.
Stir so every grain is lightly coated. Coating the rice with garlic salt, onion powder, and cumin ensures each grain is seasoned from the inside out.
4. Add the Chiles & Salsa
Add the diced green chiles and all salsa.
Cook for 20–30 seconds to let the moisture sizzle away slightly. This adda gentle flavor and faint savoriness without any heat.
5. Pour in the Broth & Add the Jalapeño
Pour in the chicken broth.
Nestle the whole jalapeño right in the center. Using the whole jalapeño perfumes the entire pot with that familiar restaurant scent — no spice, just aroma.
6. Simmer Gently
Bring to a gentle simmer.
Reduce heat to low, cover, and cook 18–20 minutes without stirring. Low, slow heat gives you tender grains and a beautiful texture.
7. Rest & Fluff
Turn off the heat and let the rice rest 5 minutes with the lid on.
Remove the jalapeño and fluff gently with a fork. This is where the magic finishes — quiet steaming time creates perfect rice.
🌸 Mrs. Clay’s Tip
If your rice ever seems just a bit firm, don’t stir or add liquid. Simply turn off the heat, keep the lid on, and let it rest an extra 5–10 minutes. The gentle steam inside the pot finishes the cooking perfectly.
