Mrs. Clay’s Tex-Mex Restaurant Salsa

❤️ A smooth, bold, restaurant-style salsa that was born from a mistake… and quickly became a family favorite.

Some recipes are carefully planned.

Some are tested over and over until they’re just right.

And then there are the recipes that seem to find you.

This was one of those.

It was Taco Tuesday, and honestly, I wasn’t having the best day. I almost skipped making anything special altogether, but I decided to push through and make a taco bar for the family. Along with the tacos, I wanted to try making a homemade restaurant-style salsa.

I wasn’t trying to copy any particular restaurant.

I simply wanted a really good Tex-Mex salsa.

Since I wasn’t sure we’d even like it, I decided to make a half batch.

I opened one 28-ounce can of tomatoes.

Added about ⅛ cup of onion.

And then…

Completely forgot to cut the rest of the ingredients in half.

Every other ingredient went into the blender at the full amount.

By the time I realized what I’d done, there wasn’t much I could do except blend it and hope for the best.

I wasn’t even feeling up to tasting it myself, so I asked one of my sons to be my official taste tester.

He took one bite with a tortilla chip, paused for a second, and said,

“This tastes like that place we used to go… the one that closed.”

He couldn’t remember the name.

A few seconds later he smiled and said,

“Superior Grill!”

The funny part is that I had never mentioned Superior Grill.

I hadn’t asked if it reminded him of any restaurant.

I simply handed him a chip and asked what he thought.

Whether it’s an exact copy or not really doesn’t matter.

What mattered was that one bite brought back a happy family memory.

Sometimes that’s the best compliment a recipe can receive.

❤️ Why I Love This Salsa

It’s smooth and restaurant-style.

It has plenty of bold tomato flavor without tasting like canned tomatoes.

The pickled jalapeños add flavor more than heat.

It’s just as good on tacos as it is with a basket of tortilla chips.

And apparently…

It has a way of bringing back good memories.

🥣 Step-by-Step with Mrs. Clay

1. Add the tomatoes.

Pour 1 (28-ounce) can of Red Gold Whole Peeled Tomatoes with all of the juice into a blender or food processor.

2. Add the vegetables.

Add:

  • About ⅛ cup white onion
  • 2 cloves garlic
  • 2 tablespoons chopped pickled jalapeños
  • 1 tablespoon pickled jalapeño juice

3. Season.

Add:

  • 1½ teaspoons kosher salt
  • teaspoon ground cumin
  • ¼ teaspoon dried oregano
  • ⅛–¼ teaspoon Accent (MSG)

If your tomatoes tend to be more acidic, you can also add 1 teaspoon sugar, but I usually wait until after tasting.

4. Blend.

Blend until smooth but not completely puréed.

I like it with just a little texture.

5. Finish.

Add the juice of 1 fresh lime.

Taste and adjust if needed.

Need a little more brightness? Add another squeeze of lime.

Want a little more kick? Add another tablespoon of chopped pickled jalapeños.

6. Chill.

Cover and refrigerate for at least an hour.

It’s even better after it has had a little time for the flavors to come together.

🌸 Mrs. Clay’s Tips

• Use good tomatoes. I made this with Red Gold Whole Peeled Tomatoes, and I think they make a real difference.

• Don’t skip the pickled jalapeño juice. It adds brightness without making the salsa overly spicy.

• I intentionally leave cilantro out because our family simply doesn’t enjoy it.

• This salsa tastes even better the next day.

• If you’re serving a crowd, simply double the recipe… although this “half batch” disappeared pretty quickly around our house.

✨ Ways to Change It Up

Extra Heat

Add another tablespoon of chopped pickled jalapeños.

Smoky Salsa

Add a pinch of chipotle powder or a small piece of chipotle in adobo.

Roasted Garlic

Replace the fresh garlic with roasted garlic for a sweeter, richer flavor.

Chunkier Salsa

Pulse the blender instead of running it continuously.

Taco Night

Use any leftovers in taco meat, taco chicken, queso, Mexican rice, or spooned over scrambled eggs the next morning.

One of the things I’ve learned after years in the kitchen is that not every mistake needs to be fixed.

Sometimes it needs to be tasted.

Ingredients

  • 1 (28-ounce) can Red Gold Whole Peeled Tomatoes, undrained
  • About ⅛ cup white onion
  • 2 cloves garlic
  • 2 tablespoons chopped pickled jalapeños
  • 1 tablespoon pickled jalapeño juice
  • 1½ teaspoons kosher salt
  • teaspoon ground cumin
  • ¼ teaspoon dried oregano
  • ⅛–¼ teaspoon Accent (MSG)
  • Juice of 1 lime
  • 1 teaspoon sugar (optional, if needed)

Instructions

  1. Add 1 (28-ounce) can Red Gold Whole Peeled Tomatoes with the juice to a blender.
  2. Add about ⅛ cup white onion, 2 cloves garlic, 2 tablespoons chopped pickled jalapeños, and 1 tablespoon pickled jalapeño juice.
  3. Add 1½ teaspoons kosher salt, teaspoon cumin, ¼ teaspoon oregano, and ⅛–¼ teaspoon Accent (MSG).
  4. Blend until mostly smooth with a little texture remaining.
  5. Stir in the juice of 1 lime.
  6. Taste. If needed, add 1 teaspoon sugar to balance acidity.
  7. Refrigerate for at least 1 hour before serving.

This recipe was completely accidental. I intended to make a half batch and forgot to reduce the seasonings. It turned into one of those happy kitchen surprises that reminded my family of a favorite Tex-Mex restaurant.
