I love making these when we’re having spaghetti, lasagna, baked ziti, or even soup on a cold evening. They look impressive sitting on the table, but they’re surprisingly simple to make.
And here’s one little secret from my kitchen…
Use fresh garlic if you possibly can.
Jarlic works when you’re in a hurry, and I’ve certainly used it before. But fresh garlic melts into the butter while the rolls bake and creates that rich, mellow garlic flavor that makes people stop mid-bite and say, “Oh my goodness…”
It’s worth the extra few minutes.

🍞 Step-by-Step with Mrs. Clay
1. Bloom the yeast.
In a large mixing bowl, combine 1 cup warm whole milk, 2¼ teaspoons yeast, and 1 tablespoon sugar.
Let it sit for 5–10 minutes until the yeast becomes nice and foamy.
2. Make the dough.
Add 1 large egg and 4 tablespoons softened butter.
Mix in 3 cups bread flour and 1½ teaspoons salt.
Stir until a soft dough forms.
3. Knead the dough.
Knead for 6–8 minutes in a stand mixer or 8–10 minutes by hand.
The dough should be soft and slightly tacky without being sticky.
4. Let it rise.
Place the dough into a lightly greased bowl.
Cover and let rise for 60–90 minutes, or until doubled in size.
5. Make the garlic butter.
While the dough rises, stir together:
- 1 stick softened butter
- 5–6 cloves fresh garlic, minced very fine
- 2 tablespoons chopped parsley
- ½ teaspoon Italian seasoning (or oregano)
- ¼ teaspoon salt
- ½ cup grated Parmesan cheese
6. Roll out the dough.
Turn the dough onto a lightly floured surface.
Roll into approximately a 12 x 16-inch rectangle.
7. Fill the dough.
Spread the garlic butter evenly over the dough.
Sprinkle with 1½ cups shredded mozzarella/provolone blend, making sure to cover all the way to the edges.
8. Roll and slice.
Starting with the long side, roll the dough tightly like cinnamon rolls.
Slice into 12 equal rolls.
9. Arrange in the pan.
Place the rolls into a greased 9 x 13-inch baking dish or divide them between two round cake pans.
Leave a little room between each roll so they have space to rise together.
10. Second rise.
Cover and let rise 30–45 minutes, until puffy.
Meanwhile, preheat the oven to 350°F.
11. Bake.
Bake for 25–32 minutes, until beautifully golden brown and cooked through.
If they’re browning too quickly, loosely cover with foil during the last few minutes.
12. Finish while warm.
Brush the tops with a little melted butter.
Sprinkle with extra Parmesan cheese and fresh parsley.
Then try to wait at least five minutes before everyone starts pulling them apart.
(That last part is the hardest.)
🌸 Mrs. Clay’s Tips
• Fresh garlic really does make a difference. It bakes into the butter and becomes sweet instead of sharp.
• Bread flour gives a slightly chewier texture, but all-purpose flour makes wonderful rolls too.
• Don’t over-flour your dough. A slightly tacky dough makes softer rolls.
• Shred your own cheese if possible. It melts much better than pre-shredded.
• These are best served warm, right out of the oven.

Pizza Rolls
Add sliced pepperoni before rolling.
Italian Herb
Mix basil and rosemary into the garlic butter.
Three Cheese
Add shredded Asiago or sharp white cheddar.
Spicy Version
Sprinkle crushed red pepper flakes into the filling.
Chicken Alfredo Night
Serve these with creamy Alfredo instead of spaghetti.

- 1 tablespoon sugar
- 1 large egg
- 4 tablespoons softened butter

Filling
- 1 stick (½ cup) softened butter
- 5–6 cloves fresh garlic, minced
- 2 tablespoons chopped parsley
