From batter bowl to golden hush puppies


Step 1: Mix the Dry Ingredients

In a medium bowl, whisk together:

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Step 2: Add the Onion

Stir in:

  • ¼ cup very finely minced yellow onion

The onion should almost disappear into the batter — this gives flavor without chunks.


Step 3: Mix the Wet Ingredients

In a small bowl, whisk:

  • 1 large egg
  • ¾ cup buttermilk

Pour into the dry ingredients and stir gently until just combined.

The batter should be thick but scoopable.
If needed, add 1–2 tablespoons more buttermilk.
