Ingredients
- 3–4 cups leftover hamburger hash
(I make mine with ground beef, diced potatoes, garlic salt, lemon & pepper, seasoning minced onion, garlic) - 1 small yellow onion, diced (optional but recommended)
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can condensed tomato soup or crushed tomatoes
- 1–2 teaspoons Worcestershire sauce
- 1–2 cups cooked vegetables (lima beans, corn, green beans, etc.) or
- 1–2 cups frozen mixed vegetables (optional)
- Salt and pepper, to taste
Optional Add-Ins
- ½–1 tsp Italian seasoning
- 1 bay leaf
- ½ tsp oregano
- 1 tsp parsley
- pinch of cayenne
- 1–2 tbsp butter
- Splash of apple cider vinegar or lemon juice (added at the end)
Instructions
- In a large pot, sauté onion in butter or oil until soft. Add garlic and cook 30 seconds.
- Stir in hamburger hash.
- Add broth, tomato soup, Worcestershire, and seasonings.
- Add vegetables.
- Simmer uncovered 20–25 minutes, stirring occasionally.
- Taste and adjust seasoning before serving.
