I usually make this soup the day after hamburger hash night. The hash is hearty on its own — ground beef, potatoes, garlic, and simple seasonings — but turning those leftovers into soup makes it feel completely new. It’s familiar, comforting, and somehow even better the second time around.

With a pot of soup simmering and something warm to bite into on the side, it’s the kind of dinner that quiets a house full of boys and brings everyone back to the table.

If you have a few extra minutes, start by sautéing a yellow onion in a little butter until soft and lightly golden. That one small step adds so much depth and makes the soup taste finished without changing its heart.

From there, everything goes into the pot — leftover hamburger hash, beef broth, tomato soup, Worcestershire, vegetables — and simmers gently while the flavors come together. Let it cook just long enough for the potatoes to soften and the broth to deepen.

Right before serving, I like to taste and adjust. Sometimes all it needs is a little salt. Other times, a small splash of apple cider vinegar or lemon wakes everything up.

Ingredients

  • 3–4 cups leftover hamburger hash
    (I make mine with ground beef, diced potatoes, garlic salt, lemon & pepper, seasoning minced onion, garlic)
  • 1 small yellow onion, diced (optional but recommended)
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can condensed tomato soup or crushed tomatoes
  • 1–2 teaspoons Worcestershire sauce
  • 1–2 cups cooked vegetables (lima beans, corn, green beans, etc.) or
  • 1–2 cups frozen mixed vegetables (optional)
  • Salt and pepper, to taste

Optional Add-Ins

  • ½–1 tsp Italian seasoning
  • 1 bay leaf
  • ½ tsp oregano
  • 1 tsp parsley
  • pinch of cayenne
  • 1–2 tbsp butter
  • Splash of apple cider vinegar or lemon juice (added at the end)

Instructions

  1. In a large pot, sauté onion in butter or oil until soft. Add garlic and cook 30 seconds.
  2. Stir in hamburger hash.
  3. Add broth, tomato soup, Worcestershire, and seasonings.
  4. Add vegetables.
  5. Simmer uncovered 20–25 minutes, stirring occasionally.
  6. Taste and adjust seasoning before serving.

Stew-Style:
Add tomato paste and simmer longer. Mash a few potatoes into the broth.

Italian-Inspired:
Use crushed tomatoes instead of tomato soup. Add Italian seasoning and finish with parmesan.

Southwest-Style:
Add cumin, chili powder, corn, and Rotel. Top with cheese.

Creamy Version:
Skip tomato soup and add milk or cream at the end.

Veggie-Heavy:
Add extra vegetables and finish with lemon for brightness.
