1. Mix the dry ingredients.
In a large bowl, whisk together:
- 4 cups (480 grams) all-purpose flour
- 2 teaspoons baking powder
- 1½ teaspoons kosher salt
2. Cut in the fat.
Add:
- ⅔ cup lard
Using your fingertips or a pastry cutter, work the lard into the flour until the mixture resembles coarse crumbs.
You don’t want large chunks of fat, but you don’t want a paste either.
3. Add the water.
Pour in:
- 1¼ cups hot water (about 120°F)
Stir with a wooden spoon until a shaggy dough forms.
Turn onto the counter and knead for about 5 minutes until smooth and soft.
If the dough feels dry, add another tablespoon or two of water.
4. Let it rest.
Cover with plastic wrap or an upside-down bowl.
Let the dough rest for 30–60 minutes.
This is one of the biggest secrets to soft tortillas.
5. Divide the dough.
Divide into 12–14 equal balls (about 65–70 grams each).
Roll each into a smooth ball.
Cover and let them rest another 10–15 minutes.
6. Roll them thin.
Lightly flour your work surface.
Roll each tortilla very thin.
If the dough keeps shrinking back, let it rest another 5 minutes, then try again.
7. Cook.
Heat a cast iron skillet or griddle over medium-high heat.
Don’t add any oil.
Cook each tortilla for:
- 30–45 seconds on the first side, until bubbles appear.
- Flip and cook another 20–30 seconds.
You’re looking for scattered golden brown spots, not dark, overcooked patches.
8. Steam.
Immediately place the cooked tortillas into a towel-lined tortilla warmer or wrap them in a clean kitchen towel.
The trapped steam keeps them wonderfully soft and flexible.
